Ensign Amstel was a human Starfleet officer assigned to the USS Enterprise in the late 2260s.

Ensign Amstel was assigned to the Enterprise's science division and was an expert in chemistry. In 2269, Amstel stated to Captain James T. Kirk that he believed he could purify the water of the planetoid Chatalia. (TOS novel: World Without End)
