Grease monkey was an old Earth slang term which was used to describe an engineer or mechanic.
The Changeling who was posing as Linda Addison in 2372, described the engineering classes at Starfleet Academy as being for grease monkey's and plasma plumbers. (TNG eBook: A Sea of Troubles)
