Hollandaise sauce was a type of sauce, usually served as a topping with delicacy food of the planet Earth, such as steak or vegetables (often, asparagus), and was also a key ingredient in eggs Benedict. Hollandaise sauce originated from the European nation-state of Holland, existing since at least the 15th century. Tom Paris would often request Hollandaise sauce to flavor his dishes. Hollandaise was made from boiled water, sautéed butter, wine, red chili pepper powder, chopped wild onion, lemon juice and egg yolks. (ST reference: Star Trek Cookbook)

Hollandaise is a term used by French language chefs to describe anything of Dutch background.
