Kimchee was a traditional dish in Korean culture on Earth, made by pickling spicy cabbage.

"For the love of kimchee!" was an expression of exasperation often used by the mother of Casey Goodwin, and one which he picked up from her. (ST novel: Articles of the Federation)

The characters in the novel explain kimchee is a type of coleslaw, though this is not technically accurate, and perhaps intended to stress their incomprehension of the expression.
