A mineral is a naturally occurring substance formed through geological processes with a defined chemical structure and specific physical characteristics. Minerals can range from deposits of near pure elements to highly complex chemical compounds. Rock is composed of mixtures of minerals.
Planets and bodies rich in certain, valuable, types of minerals were often targets for mining operations. Janus VI was a planet notable for it's valuable mineral resources. (TOS episode: The Devil in the Dark)
The diet of the Horta species consisted of minerals which they digested after dissolving the rock containing them with powerful acids. (DS9 novel: Devil in the Sky)
