St. Kevin's Day was an invention of Lieutenant Kevin Riley that was concocted when he suffered from polywater intoxication in 2266. While in control of the USS Enterprise, Riley decreed that all of the crew would receive portions of ice cream due to it being St. Kevin's Day. (TOS novelization: "The Naked Time").
