Stellar cartography is the science of making maps and projections of space and the stars and other astronomical objects located there. A stellar cartographer was a scientist who specialized in this function. Most Federation Starfleet starships had their own stellar cartography laboratory.
In 2376, stellar cartography equipment was installed aboard the USS Defiant in preparation for an upcoming exploration mission in the Gamma Quadrant. (DS9 novel: Avatar, DS9 - Section 31 novel: Abyss)
