A taspar egg is the egg of a animal lifeform from Cardassia called a taspar. Taspar eggs were a common food item of the Cardassian diet.

During the first diplomatic visit by Cardassians to planet Bajor, Minister Kubus Oak apologized that their Bajoran feast might now have been as appealing as taspar eggs. (ST - Terok Nor novel: Day of the Vipers)
Taspar eggs were served during a reception aboard the USS Carthage in 2328 for a Cardassian diplomatic team. The mess chef had found it a challenge to cook them properly. (TLE novel: Well of Souls)
- Interestingly, the event referenced in Well of Souls is actually seen in The Art of the Impossible, though that book only mentions a "peculiar-looking egg" dish without naming it.
