The construction of the ship began in 2369 and was overseen by Commander Vincenzo. If Benjamin Sisko had remained at the Utopia Planitia Fleet Yards and not taken command of Deep Space 9, Sisko could have been the officer in charge.
The Saratoga was completed and ready for launch in early 2372. The survivors of the original Saratoga were invited to the launch and several were brought to DS9 by their respective starships for Captain Sisko to bring them to Mars aboard the USS Defiant. The launch of the Saratoga was briefly postponed after an incident aboard the Defiant, but it soon went ahead, minus a few of the original Saratoga crew in attendance.
The ship was christened with a bottle of champagne that was ejected into space and hit the side of the ship. Commander Vincenzo, who was to be promoted and given command of the ship, expressed his hope to Captain Sisko that she would "acquit herself half as well as your Saratoga, Captain". Sisko told him "My Saratoga is just a memory, Mr. Vincenzo. Now it's your turn. Go make some memories of your own". (DS9 novel: Saratoga)
- In Star Trek: Armada II, the Saratoga was a Sovereign-class starship.
